Olive oil
½ teaspoon sweet smoked paprika
½ teaspoon mild chili powder
½ teaspoon ground cumin
1 lime
1 large red onion
1 yellow pepper
1 red pepper
4 x 120 g skinless free-range chicken breasts
4 whole wheat flour tortillas
4 sprigs of fresh coriander
4 tablespoons natural yogurt
Cheat's Mole Sauce
2 medium ripe tomatoes
2 tablespoons chipotle paste
½ teaspoon ground cinnamon
1 teaspoon ground cumin
1 pinch mild chili powder
15 g quality dark chocolate (70%)

1. Place 1 tablespoon of oil in a bowl of spices and half a lime juice.
2. Peel and finely chop the onion, then trim the pepper and remove the seeds. Cut the peppers and chicken breasts into 1 cm wide strips.
3. Add the onion, pepper and chicken to the spice bowl, add a pinch of sea salt and black pepper and stir to combine. Leave to marinate while you make the milk sauce.
4. Pour 1 tablespoon of oil into a skillet over medium heat. Finely chop the tomatoes and add to the pan, followed by the chipotle and spices. Boil for 2-3 minutes, then pour 200 ml of hot water. Cook for 10 more minutes or until thickened, mashing the tomatoes for a more uniform sauce.
5. Remove from heat and finely grate the chocolate, stir until melted, then set aside for later. Wrap the tortillas in foil and set aside.
6. Pour 1 tablespoon of oil into a large skillet over medium heat. Add chicken and vegetables and cook for 6 minutes or until cooked through, flipping halfway through. You may need to do this in batches.
7. Meanwhile, place the bag of tortillas in the oven for 5 minutes to heat through. Cut the remaining lime half into wedges, select and finely chop the coriander leaves, and transfer the yogurt to a small bowl.
8. Remove the tortillas from the oven and prepare the fajitas: take the wrapper, put some mole sauce on top and put the chicken and vegetables on top. Pour in some yogurt, sprinkle with a few coriander leaves and squeeze in some lime juice. Nice to serve with a spoonful of fresh guacamole.
