Caviar is an indispensable New Year's treat. Like any delicacy, it has many characteristics for which seafood lovers value it and which manufacturers persistently try to fake. To choose the most delicious caviar for the New Year's table, focus on the following criteria:

Color and shine

Natural caviar should have a bright red color, be slightly shiny and translucent in appearance. The eggs must be whole.

Fake caviar can be similar in color to quality caviar, but often appears less shiny and more uniform.

Grain size

Natural caviar has large and uniform grains

Fake caviar is characterized by small, stuck together grains.

Smell

Natural caviar has a characteristic marine aroma.

Fake caviar can smell sharp and have a distinct chemical odor.

Packaging and labeling

Natural caviar should be packaged in glass containers or vacuum packed. The labeling must contain information about the manufacturer, expiration date and place of production.

Fake caviar is often packaged in plastic containers that are not airtight, the labeling is incomplete, or the specified harvesting time does not coincide with the period in which the caviar is actually harvested.
