Kvass: drink made from rye bread

A recipe for tasty and healthy kvass based on rye bread, prepared with yeast, raisins, mint and cinnamon. Be sure to try!

Kvass is still one of the favorite soft drinks. Making real kvass at home is not easy due to the lack of malt. But lovers of this drink came up with their own recipes, in which they most often began to use baked rye bread crackers. Such kvass, undoubtedly, is in many respects inferior to that made from malt, but, nevertheless, it has an excellent taste.

Ингредиенты

Water - 5 liters

Rye bread - 700 g

Sugar - 200 g

Yeast - 25 g

Raisins - 25 g

Dry mint - 10 g

Cinnamon - 0.5 tsp

Рецепт

1. Slices of bread cut into cubes.

2. Put the bread on a baking sheet and lightly brown in the oven. Be careful not to burn!

3. Pour dried and even slightly toasted bread into a jar.

4. Boil water, pour crackers into it and let stand for 3-4 hours.

5. Strain the infusion and cool to room temperature.

6. Dilute yeast in a small amount of infusion.

7. Pour yeast into the infusion, add sugar and put mint and cinnamon.

8. Stir the mixture until the sugar is completely dissolved. Cover the container with gauze and leave to ferment at room temperature for 10 hours.

9. When kvass begins to foam, strain it, pour into bottles, put 2-4 washed and dried raisins into each. Seal the bottles and put in the refrigerator. After 2-3 days, homemade kvass from rye bread, raisins and yeast is ready.
