Bakchendel: the famous Viennese chicken

Bakhendel (Bakhandl) or Viennese chicken is an Austrian dish that has been prepared in Austria since the 18th century. This dish was considered the food of aristocrats, as it was distinguished by its aroma and delicate taste, and despite the fact that it is very easy to prepare.

In order for the Bakhandel to turn out tasty and juicy, the chicken must be sprinkled well with lemon juice, salt, pepper and marinate for about an hour. At first glance, it seems to many that this dish is very similar to Viennese schnitzel, but in fact these are two completely different recipes both in taste and in appearance, respectively.

Chicken - 1 kg

Lemon - 0.5 pcs.

Sea salt - to taste

Pepper - taste

Vegetable oil - for frying

Breadcrumbs - 5-6 tablespoons

Flour - 4-5 tbsp.

Chicken egg - 2 pcs.

Paprika (optional) - 1 tsp

1. Remove the skin from the chicken. Salt and pepper, sprinkle well with lemon juice. Cover the bowl with cling film and place in the refrigerator to marinate for an hour.

2. Prepare all the necessary ingredients for breading and frying the chicken. Beat the eggs with a whisk or fork. Crackers, if desired, can be tinted with ground paprika.

3. Chicken pieces must be breaded before frying. First, they need to be rolled in flour.

4. Then each piece must be dipped in beaten eggs.

5. And roll in breadcrumbs.

6. You can cook chicken in two ways - until cooked in deep fat, or fry in a pan and bring to readiness in the oven.

7. Heat vegetable oil in a frying pan, fry the chicken until golden brown on all sides.

8. Transfer the fried chicken to a baking dish. And cook in an oven preheated to 180 degrees until cooked, 15-20 minutes.

9. Serve Bakchendel (Viennese chicken) with a slice of lemon and parsley.
