Khachapuri in Abkhazian: pastries with Adyghe cheese

Khachapuri is a dish of Caucasian cuisine. All the peoples living in the Caucasus prepare it in their own way. But in one thing it remains unchanged - it is a cake with cheese, as a rule, with Adyghe and Suluguni or with these cheeses together. The dough can be fresh or yeast. In any case, khachapuri is a delicious, homemade dish.

Kefir - 1 glass

Dry yeast - 8 g

Sugar - 1 tsp

Salt - 1 tsp

Sunflower oil - 70 ml.

Butter - 40 g

Flour - 400 g

Adyghe cheese - 500 g

Garlic - 2 cloves

Greens - 20 g

1. Cooking the dough. Sift the flour into a deep bowl. Add dry yeast, salt and sugar.

2. Pour kefir and sunflower oil at room temperature into flour with sugar, salt and yeast.

3. Mix all these ingredients.

4. Knead soft, elastic dough and put in heat.

5. While the dough is rising, prepare the filling for khachapuri. Let's grate the Adyghe cheese.

6. My garlic and herbs and chop. Add to cheese.

7. Mix all the ingredients. The filling is ready.

8. After 50-60 minutes, the dough will increase in volume. It's ready to bake.

9. Divide the dough into 6-7 parts.

10. Roll each part into a round layer.

11. Put the filling in the middle of the circle. You don’t need to feel sorry for her, the cheese melts during the baking process.

12. Then we do this. Raise the edges of the layer and pinch at the top. We get a bag.

13. Turn over the "bag" and carefully roll it out with a rolling pin.

14. So we do with the rest of the dough and filling. Put khachapuri on a baking sheet.

15. Lubricate the egg yolk.

16. Bake in the oven until golden brown for 20-25 minutes.

17. Grease hot khachapuri with butter and stack on top of each other. Cover with a dry towel.
