Baba Ganush

Today we will prepare a fragrant eggplant sauce - Baba Ganoush.

Baba Ganoush is one of the most popular snacks in Middle Eastern cuisine.

The sauce is made from fried eggplant mixed with lemon juice, fried garlic cloves, tahini and olive juice.

The consistency of the sauce is thick, so it is perfect with a slice of crispy bread or pita bread.

Ингредиенты

Garlic - 1 head + 1 clove

Olive oil - 1 tbsp. and 1 tsp. + for decoration

Eggplant - 2 pcs. medium

Lemon juice - 3 tbsp.

Tahini - ¼ tbsp.

Parsley - 1 tbsp. sliced

Salt - to taste

Freshly ground black pepper - to taste

1. First of all, you need to turn on the oven in the top-bottom mode by 240 degrees.

2. While the oven is heating up, wash the eggplant, dry it, pierce it on all sides with a fork and put it on a baking sheet covered with foil.

3. Cut off the top of the garlic head and drizzle with olive oil. Season with salt and pepper and wrap in foil, also place on a baking sheet with eggplants.

4. Send the baking sheet to the oven preheated to 240 degrees. Roast, turning occasionally, until the eggplant is browned on the outside and soft on the inside and the garlic is tender, 30 to 35 minutes. Tip: Test the doneness of the eggplant by sticking a paring knife into the center of the eggplant. If there is any resistance, continue frying.

5. Let the eggplants cool for 10 minutes, then cut and remove the pulp.

6. In a large bowl, combine the eggplant, fried garlic cloves and lemon juice, tahini, 1 tablespoon olive oil and grate the remaining garlic clove into the bowl.

7. Grind the mass until all the ingredients are combined with an immersion blender.

8. Toss and season with salt, then transfer to a serving platter.

9. Garnish with parsley, paprika and olive oil.

10. Serve with toasted pita and/or vegetables.
