How I would like to be a little girl at least for a day and visit my favorite kindergarten “Olesya”. My mother worked as a manager at the time and I could walk around the garden at any time.
The kitchen is the most mysterious part of the children's institution for us children. It is always closed and smells of hot milk. I managed to get to this very “magical” point as an adult, when I did an internship at a culinary school. I remember that one of the first dishes in kindergarten was rice casserole with raisins.
Today we will bake a real rice casserole at home, just like in kindergarten, according to the technological map. The casserole is prepared from viscous rice porridge with the addition of raisins.

For rice porridge:
Water – 500 ml
Rice – 200 g
Milk – 150 g
Dark raisins – 50 g
Sugar – 40 g
Butter – 20 g
Chicken egg – 1.5 pcs.
Salt – 2 g
For sprinkling the mold:
Butter – 1 tsp.
Breadcrumbs - for sprinkling
For the sauce:
Sour cream – 2 tbsp.
Chicken egg – 1/2 pcs.

1. First you need to cook viscous rice porridge. Take short grain rice. We rinse it several times until there is clean water. Rice must be cooked until tender for 20 minutes. Then drain the rice water. Add boiled hot milk, sugar, and a little salt to the rice porridge.
2. Continue cooking the milk rice porridge for at least 10 minutes until fully cooked. The end result is delicious rice porridge. At this stage, we could have finished preparing the children’s dish, but we don’t have rice porridge, but a rice casserole.
3. So, cool the porridge to 60°C. Break a chicken egg, add clean, washed raisins and melted butter.
4. Mix everything well. The casserole base is ready!
5. Take a baking dish. Grease with butter. Sprinkle with wheat breadcrumbs. Spread the rice mass over the entire pan in a layer of at least 4-6 cm.
6. In a separate container, mix sour cream with a chicken egg. Grease the surface of the future casserole with egg mixture.
7. Place the mold in a well-heated oven for 15 minutes. Baking temperature – at least 240°C. As soon as a golden crust forms on the surface, the casserole is ready!
8. Kindergarten-style rice casserole has a subtle aroma of milky rice porridge with notes of raisins. A very tasty combination. We serve the casserole to the children's table for breakfast or dinner.
