I can definitely say that there is no difference how to cook the dough - on kefir or yeast. The result is excellent in both cases, but the time savings are significant. Kefir dough remains soft even the next day, if you do not make it tight when kneading.
Pide with potatoes can be served with different sauces, to taste. For example, with sour milk or spicy tomato. And I also liked to eat them with adjika. In general, it is not forbidden to experiment - in any case, it will be delicious.

Flour - 400 g
Kefir - 250 ml
Vegetable oil - 3 tbsp.
Soda - 0.5 tsp
Sugar - 1.5 tsp
Salt - 0.5 tsp
Filling:
Potatoes - 5 pcs.
Green onion - 200 g
Cilantro - 30 g
Butter - 20 g
Pickled cheese - 60 g
Salt - to taste

1. Peel potatoes and put to boil.
2. For the dough, add soda, salt and sugar to kefir. Mix well and add vegetable oil.
3. Then add flour and knead a very soft dough. Knead it a little on the table, trying not to add any more flour. The consistency of the dough should be like yeast, very soft and slightly flowing. Leave the dough under the towel while you prepare the filling.
4. Finely chop the green onion and cilantro.
5. Drain water from boiled potatoes and mash into puree. Add crumbled soft pickled cheese, spices, all herbs and a dollop of butter, mix until smooth. You may not need to add salt, as the cheese is already salty. Try and do as you like, adjust the amount of cheese according to the degree of salinity. The filling comes out already delicious and you can eat it just like that.
6. Divide the dough into 5 pieces. Roll each into an oblong cake and place on a baking sheet. The baking sheet can be greased with oil or lined with parchment. Choose waxed parchment so that nothing sticks to it.
7. Put the potato and cheese filling in the center along the entire tortilla.
8. Form the boats, carefully fastening the ends. Put the pide to bake in the oven preheated to the maximum for about 7-10 minutes. The baking time depends on the properties of your oven. As soon as the dough becomes golden, the pide is ready.
9. The boats "come out" of the oven at first crispy on top, even the resulting bubbles are visible. Lying at rest, the dough becomes very soft and tender.
