Instead of dough, we will use thin pita bread, you can wrap any filling in it and get an excellent result. Today, as a filling, I have hard cheese with tomato - tasty, satisfying and juicy. I made blanks in the form of triangles, and then fried them in vegetable oil until golden brown. Served warm with tea. Try it too!
Lavash triangles with cheese and tomatoes

Lavash thin - 220 g
Tomato - 1 pc. (180 g)
Hard cheese - 75 g
Chicken egg - 1 pc.
Salt - to taste
Vegetable oil - 30 ml (for frying)

1. First of all, let's deal with the filling. On the tomato we will make a cruciform cut (as in the photo) and lower it into boiling water for 1 minute. Then transfer to a bowl of cold water. After such a “bathing”, we can easily remove the skin from the tomato, and cut the flesh into small cubes.
2. Grate hard cheese and combine with the previously prepared tomato. Let's mix. The filling can be slightly salted, but I did not do this, since my cheese is already salty.
3. Cut thin pita bread into long strips (as in the photo). I got 4 pieces.
4. Put a tablespoon of filling on the edge.
5. Wrap the pita bread in a triangle, starting from the side with the filling. We'll cut off the excess.
6. The result should be such a blank.
7. So that the edge of the triangle does not wrap during frying, grease it with a beaten egg.
8. Put the blanks on a frying pan heated with vegetable oil.
9. Fry them until golden brown on both sides, 1-1.5 minutes on each side.
10. Lavash triangles with cheese and tomatoes, fried in a pan, are ready. Serve them on the table immediately, while the pita bread is warm and crispy, and the cheese is viscous.
