If you want to have lunch or dinner with something healthy and tasty, then this dish is for you. Vegetables and meat - what could be more correct in their combination.
Stewed beef with zucchini and other vegetables can be served as an independent hot dish or supplemented with any side dish. For me, everything is very organic in this version and I don’t want to add anything. Vegetables cook quite quickly, you only need to simmer the meat until tender. And the cooking time just depends on the quality of the meat. But there is nothing complicated - you fried it, poured it with water, and while the meat is cooking, you can do a lot of useful things. Young zucchini are best suited for this dish, in this case they do not need to be peeled.

Beef - 400 g
Zucchini - 3 pcs. (young)
Carrot - 1 pc.
Onion - 1-2 pcs.
Bulgarian pepper - 2 pcs.
Tomatoes - 2-3 pcs.
Vegetable oil - 2 tbsp.
Garlic - 2 cloves
Salt - to taste

1. Rinse the beef and cut into comfortable pieces.
2. For clean zucchini, cut off the ends on both sides and cut the vegetables in half, and then in slices.
3. Prepare onions, bell peppers and carrots. Of course, you can not add carrots and peppers, but with them the dish looks more elegant, fragrant and tasty.
4. Tomatoes can be grated, or cut into pieces if you are not very irritated by its skin.
5. In a cauldron or non-stick pan, heat the vegetable oil well and fry the beef so that it seizes on top and the juices remain inside. Then salt.
6. Add one and a half cups of water to the pan and cook, covered, until the meat is soft. No matter which cup you take, excess water can always be evaporated by holding the meat open on the fire. If the water evaporates earlier, and the meat remains tough, then pour in a little more water.
7. When there is very little water left, add the onion and, stirring, keep on fire for another 5 minutes.
8. Add carrots and peppers, salt. Simmer for 5-7 minutes.
9. Add zucchini, mix the contents of the pan, reduce the heat to a minimum and simmer for 10 minutes. You can cover with a lid so that the zucchini give their juice.
10. Pour in the mashed tomatoes and add chopped garlic, mix. Keep on fire for another 5 minutes.
11. Braised beef with zucchini is ready, check the dish for salt. It remains only to sprinkle with herbs.
