Pumpkin seed pesto

Pumpkin seed pesto is an Austrian version of a popular Italian sauce. The sauce turns out to be colorful, healthy and very appetizing in taste, goes well with pasta, vegetables and meat dishes.

Austrian pesto can be prepared from roasted or raw, previously soaked in water, seeds. Each version of the sauce is tasty and worthy of attention in its own way. Today I propose to prepare a healthier and lighter version of the dish - raw pumpkin seed pesto. Let's start?!

For cooking, you will need these ingredients.

Ингредиенты

Pumpkin seeds - 250 g

Garlic - 2-3 cloves (to taste)

Lemon juice - 2-3 tablespoons (taste)

Olive oil - 6-7 tbsp.

Dried basil - 1-2 tsp

Parsley - 60-70 g

Salt - to taste

Ground black pepper - to taste

1. Pour the peeled pumpkin seeds with cold water and let it brew for 12-14 hours.

2. Then carefully strain the seeds and place in the blender bowl.

3. Add peeled garlic cloves and beat all 2-3 minutes.

4. Add lemon juice, olive oil, dried basil and parsley leaves (top of bunch). Beat still 2-3 minutes, until a homogeneous mass is obtained.

5. Add salt and ground black pepper to taste. If necessary, adjust the consistency of the pesto by adding a little more olive oil or lemon juice to taste.

6. The finished sauce can be stored in the refrigerator in an airtight container for up to 2 days.

7. Pumpkin seed pesto is ready.
