Cooked on kefir, the dough for cheese cakes turns out to be very tender, airy, does not require kneading and infusion, and has an appetizing creamy and rather neutral taste, which allows you to use almost everything that is in the refrigerator as a filling for cakes.

Kefir - 250 g
Sugar - 0.5 tsp
Salt - 0.5 tsp
Soda - 0.5 tsp
Cheese - 100 g
Wheat flour - 300 g + for working with dough
Curd 5% - 400 g
Yolk - 3 pcs.
Butter - 50 g
Salt - to taste
Ground black pepper - to taste
Dill - 0.5 bunch
Green onions - 0.5 bunch
Vegetable oil - for frying

1. Prepare the ingredients according to the list.
2. Rub the cottage cheese through a sieve or mash with a pestle or potato masher to a paste-like state.
3. Add softened butter and mix everything well, rubbing the mixture with a spoon.
4. Adding one at a time, stir in the egg yolks into the curd mass.
5. Add finely chopped greens, salt and ground black pepper to taste. Mix everything well again. The filling is ready.
6. Prepare the dough. Mix kefir at room temperature, salt, sugar and soda and leave the mixture for 5 minutes so that the soda reacts with kefir.
7. Add grated cheese on a fine grater and gradually stir in 300 grams of sifted wheat flour into the mixture. The dough will turn out a little sticky, but you do not need to increase the amount of flour, just like kneading the dough - this will make it less soft and airy.
8. Transfer the dough to a floured work surface, form into a ball and roll in flour to make the surface less sticky and more comfortable to work with.
9. Divide the dough into 6 equal portions.
10. Adding flour if necessary, level the portion of the dough to a thickness of about 0.5 centimeter.
11. Add 2 tbsp. fillings.
12. Pinch the edges of the dough to make a "bag", and sprinkle the junction with a pinch of flour.
13. Gently flatten the cake to the desired size.
14. Fry the cakes over medium heat for 3-4 minutes on each side, until golden brown. In order for the cakes to bake faster, turn the cake over and cover the pan with a lid.
