Autumn is generous with all kinds of gifts of nature - it's a sin not to take advantage of this. To the attention of connoisseurs of the aesthetic pleasure of eating - recipes for salads from simple and affordable ingredients that are strongly associated with autumn:

Zucchini salad with feta

Zucchini (or zucchini) is one of the most autumn fruits. Its taste in a salad is perfectly complemented by creamy notes of feta. To prepare two servings, you will need

  • 200 g zucchini;
  • 50 g of pine nuts;
  • 100 g feta;
  • 4 tbsp vegetable oil;
  • 4 tbsp vegetable oil;
  • salt pepper

Wash the zucchini, cut, put the slices in a bowl, season with oil, lemon juice and spices. Leave for half an hour so that the vegetable absorbs the flavors better. Divide the seasoned zucchini among bowls, top with chopped feta and nuts. Garnish with greens if desired.

Crab salad with pumpkin

Another edible symbol of autumn is the pumpkin. It transforms any dish, making it more vivid both visually and from a taste point of view. By adding it to crab salad, you will get a completely new, but with every chance of becoming a favorite dish. For two servings of salad you will need

  • half a kilo of pumpkin pulp;
  • 50 g of walnuts;
  • a little vegetable oil;
  • 200 g crab meat or sticks;
  • mint and dill;
  • 1 st. l. wine vinegar;
  • spices.

Cut the pumpkin into small cubes and fry in vegetable oil until an appetizing crust appears. Mix wine vinegar, herbs and nuts, grind it all to a puree. Cut crab meat or sticks into cubes and combine with the rest of the ingredients. Season and garnish with mint leaves.

Green radish salad

This vegetable with a sharp taste can sound completely different in a salad than by itself - gently and piquantly. For a couple of servings you will need

  • 1 carrot;
  • 1 small green radish;
  • 4 tbsp. l. sesame oil;
  • 1 red onion (you can use half);
  • 100 g of hard cheese;
  • dill, parsley.

Chop radish and carrots, put in a bowl. Add finely chopped greens and onion, cut into very thin rings (so that its smell and taste do not overshadow the rest of the ingredients). Grate the cheese on a coarse grater, also send it to a bowl, pour the finished salad with sesame oil.
