I want to share with you one of my recipes for simple pancakes with milk, which I have been using for many years. Pancakes are thin, not rubbery at all, with a crispy edge. It is desirable to use milk with a fat content of at least 3%. Do not be embarrassed by the presence of baking powder in the recipe - the baking powder will add airiness to the dough and when baking pancakes will turn out into a small hole.

Milk (3.5%) - 600 ml
Eggs - 2 pcs
Premium wheat flour - 200 g
Sugar - 1.5 tbsp
Vanilla sugar - 1 tsp
Salt - 1/4 tsp
Baking powder - 1 tsp riding
Refined vegetable oil - 2 tbsp
Melted butter for greasing pancakes

1. Whisk eggs with sugar, vanilla sugar and salt. Pour in the milk.
2. Sift the flour with baking powder and pour it in parts into the egg-milk mixture, without ceasing to beat the dough with a whisk. The dough should be homogeneous, without lumps.
3. Pour in vegetable oil, mix thoroughly and let the dough brew for about 15-20 minutes.
4. Heat the frying pan well, grease with vegetable oil and bake pancakes until golden brown on both sides. Periodically grease the pan with vegetable oil. Brush each pancake with melted butter.
5. Ready-made pancakes can be stuffed with various fillings or served with jam, sour cream, honey or any other additives to your taste.
