The purpose of pumpkin caviar is downright universal: it can be used as an independent snack, spread on bread or served as a sauce along with a side dish or a meat or fish dish. Ready caviar can be stored for several days in the refrigerator or rolled up in sterile jars, and then a delicious snack will be stored for several months.
To prepare pumpkin caviar for the winter, take the following products: vegetables, vegetable oil, salt, spices, tomato.

Pumpkin - 300 g
Onion - 1 pc.
Sweet pepper - 1 pc.
Salt - 1/3 tsp
Vegetable oil - 30 ml
Tomato juice - 100 ml
Garlic - 1-2 cloves
Spices - 0.5 tsp

1. Rinse sweet pepper, remove seeds and stalk, cut into pieces. Onions must be peeled, washed and cut into pieces.
2. Rinse the pumpkin, cut off the hard peel and cut the vegetable into medium-sized pieces.
3. Put the chopped vegetables in a saucepan, add vegetable oil.
4. Salt vegetables, add your favorite spices, such as black pepper, red pepper, paprika, turmeric, or a mixture of dried herbs. Simmer under a closed lid over low heat for 30 minutes. You can also send vegetables in a saucepan to the oven and bake at a temperature of 180 degrees for 20-25 minutes.
5. Peel and finely chop the garlic cloves. Send garlic to a saucepan, add tomato juice or tomato paste and 100 ml of water here. Simmer another 15 minutes.
6. Puree stewed vegetables with a blender.
7. Scald jars for preserving pumpkin caviar for the winter from the inside with boiling water or bake in the oven, also scald the lids. Arrange pumpkin caviar in jars.
8. Screw jars with caviar with sterile lids, wrap until completely cool. Store in a cool place or even in the refrigerator.
