Today we will prepare a Greek salad using orzo. Although it looks a bit like rice, orzo is not a grain. It's pasta! It is an excellent salad base.

You can add any vegetables, cheese, and dressing you like, but this simple, fresh recipe is filled with all of our favorite bright Mediterranean flavors and toppings, like sweet tomatoes, salted olives, cucumber, and spicy feta.
Take it to the park for a light picnic or as a refreshing summer addition to your group meal.

For refueling:
Fresh lemon juice - 2 tbsp.
Dijon mustard - ½ tsp
Olive oil - ¼ tbsp.
Fresh dill - 2 tbsp. chopped + for serving
Red onion - ¼ tbsp.
Freshly ground black pepper
For salad:
Orzo - 230 gr
Cucumbers - 3 pcs
Cherry tomatoes - 2 tbsp.
Canned chickpeas - 400 gr
Pitted kalamata olives - ½ tbsp.
Crushed feta - 1 tbsp.

1. In a saucepan of boiling salted water, cook orzo according to package directions until al dente. Drain the water and set aside.
2. Make dressing: In a large bowl, combine lemon juice and mustard. While stirring vigorously with a whisk, slowly add the oil until completely combined. Add dill and red onion, then season with salt and pepper.
3. Prepare the salad: In a bowl of dressing, add the orzo, sliced cucumbers, cherry tomatoes, washed and dried chickpeas, and olives and toss to combine. Add feta and serve sprinkled with dill on top.
