Lemon kvass

In the heat of summer, it is nice to have a soft drink in the form of kvass in the refrigerator. And if it is cooked at home, it is doubly pleasant.

I want to share a wonderful recipe for lemon kvass without citric acid. I have been making kvass according to this recipe for several years in a row and I am always satisfied with the result. Kvass is moderately spicy, very fragrant. The taste of this kvass reminds me more of lemonade from childhood, such as "Pinocchio" or "Duchess". My children drink lemon kvass with pleasure, and as soon as the next bottle runs out in the refrigerator, they run and ask to repeat it.

Rinse the lemons well and pour over with boiling water, then dry. Water for kvass is better to take spring or filtered.

Ингредиенты

Water - 3 l

Lemon - 4 pcs.

Sugar - 400 g

Dry yeast - 2 tsp

Raisins 30 g

1. Pour water into a large saucepan, add sugar and put on fire. Bring water to a boil, then remove and cool to about 30 degrees. Remove the zest from the lemons and then squeeze the juice out of them.

2. When our sweet water has cooled, add yeast, zest and lemon juice to the pan. Mix everything well.

3. Cover the pot with the future kvass and leave at room temperature for 5-6 hours. I leave the pot overnight. Small bubbles will appear on the surface of the water, which means that our kvass has begun to ferment.

4. Strain kvass through cheesecloth and bottle. Drop 8-10 raisins into each bottle. Close the bottles with kvass with lids and refrigerate for 24-27 hours.

5. Lemon kvass is ready. I got such a beautiful kvass with bubbles.
