Fortunately, now this tradition has already spread to the whole world, so every housewife can now cook incredibly tasty, fragrant, with a crispy crust and tender juicy meat turkey for her guests.

In principle, cooking a turkey is a simple matter, if you follow a few very important points:
be sure to defrost the turkey completely, then wipe it dry with paper towels correctly calculate the cooking time of a turkey depending on its weight, a 4-5 kg turkey should be cooked for about 3 hours, a 6-8 kg turkey should be kept in the oven for about 5 hours be sure to cover the turkey breast with foil or bacon to make it juicy let the finished roasted turkey rest for 20 minutes, without covering with anything
Well, now let's cook our Christmas turkey. We will prepare all the necessary products. We take out the butter from the refrigerator so that it softens, take the thawed and dried turkey out of the refrigerator and let it stand at room temperature for an hour. Preheat the oven to 220 degrees C.

Bacon - 200 g
Butter - 150 g
Rosemary - 15 g
Sage - 15 g

1. In the meantime, prepare the coating for the turkey. To do this, cut the leaves of fresh rosemary and sage very finely, pass the garlic through a press, crush the bay leaf well in a mortar.
2. Put softened butter in a bowl and add chopped herbs and garlic to it. Add salt and olive oil. Mix everything well with your hands - until a homogeneous mass is obtained.
3. Cut the orange, tangerines, onion and lemon into quarters.
4. Lubricate the turkey well with fragrant butter outside and inside. Stuff the chopped fruits and onions inside.
5. Put the turkey on a baking sheet and send it to the preheated oven for 20-25 minutes.
6. Then we take the baking sheet with the turkey out of the oven and set the temperature to 170 degrees C. Cover the turkey breast with strips of bacon, as in the photo below, and again send the baking sheet with the turkey to the oven for 3-4 hours. During this time, pour over the turkey several times with the juice that is released during frying. We check the readiness of the turkey with a special thermometer or simply pierce it with a skewer, a clear juice will stand out from the finished turkey.
7. We take out the finished turkey from the oven, remove the strips of bacon, let it rest for about twenty minutes, after which we put the whole carcass, baked vegetables, citrus fruits on a large dish.
8. Usually, a turkey baked in the oven is served at the table and already there it is cut into portioned pieces. Add vegetables to the side dish and pour meat with lingonberry sauce. I love the leg and lingonberry sauce.
