Cake "Count ruins" with sour cream

This cake is prepared very simply, most importantly, you don’t need to worry that the biscuit will not turn out or that it will not be perfectly even, in this cake the biscuit will be cut into cubes.

A distinctive feature of the cake "Count ruins" from similar counterparts is that its basis is a white biscuit, and the "ruins" themselves are made from chocolate biscuit. Previously, fruits were not added to this cake, as, for example, in the Pancho cake, but in my version I decided to add a gag and added a layer of tangerines for juiciness.

Biscuit:

Eggs - 2 pcs.

Sugar - 180 g

Wheat flour - 240 g

Soda - 2 tsp

Sour cream - 200 g + 1 tbsp. in a dark biscuit

Cocoa powder - 2 tbsp

Cream:

Sour cream 30% - 500 g

Powdered sugar - 180 g

Vanillin - 1 g

Chocolate glaze:

Cocoa powder - 4 tbsp.

Sour cream - 4 tablespoons

Sugar - 4 tablespoons

Butter - 100 g

Tangerines or oranges - 1-2 pcs.

Walnuts - a handful

Sweet syrup - for soaking biscuit

1. To prepare the cake "Earl ruins" with sour cream, prepare the necessary products

2. Break the eggs into a bowl, add sugar, beat the mass very thoroughly with a whisk.

3. Next, add sour cream and continue beating

4. Extinguish the soda and add it to the dough. Sift flour. Mix thoroughly with a spoon.

5. In a form with a diameter of 23 cm, covered with parchment, pour 1/3 of the dough.

6. Preheat the oven to 180 degrees and bake a light biscuit for 15 minutes.

7. In the remaining 2/3 of the dough, add 2 tbsp. cocoa and 1 tbsp. sour cream. Mix the mass again thoroughly.

8. Pour the chocolate dough into another mold lined with parchment.

9. Bake chocolate biscuit for 20-25 minutes. It turned out a little uneven, but in this case it doesn’t matter, the most important thing is that it is very soft and tasty!

10. Cool both biscuits. Chocolate - cut into cubes.

11. For cream, beat sour cream with powdered sugar. In this case, I always use homemade fat sour cream, this is a guarantee that the cream will turn out perfect.

12. Put a light biscuit on a plate, soak with syrup or diluted sweet liquor, grease with sour cream. Cut tangerines into circles, spread over the cream.

13. Then dip the pieces of chocolate biscuit in sour cream and lay them out in a chaotic manner. You should press the cubes a little on top so that there are no voids in the cake.

14. When the cake is assembled, prepare the icing. To do this, pour sugar and cocoa into the ladle, add sour cream and butter. Stir over low heat until smooth. Pour glaze over cake, then sprinkle with chopped walnuts.

15. Put the cake in the refrigerator for several hours to soak it. Cake "Count ruins" with sour cream is ready - you can serve it to the table.
