Taramasalata is a fish caviar appetizer sauce. You can take any caviar, but not fresh, but salted or smoked. In Crete, this salad is often cooked during Lent, because many Greeks fast and eat fish and seafood quite often. I have seen both salted and smoked caviar on sale. Usually cod or herring caviar is used.

Fish caviar (salted or smoked) - 100 g
Potato - 350 g
Olive oil - 2-3 tbsp.
White bread - 2-3 pieces

Lemon juice - 2-3 tablespoons

1. Soak bread in water for 10 minutes.
2. Peel the onion and garlic, cut the onion into cubes, garlic into slices.
3. Cut the potatoes into cubes.
4. Put the chopped vegetables into the blender bowl. And it's good to punch them together.
5. Squeeze the bread well out of the water and add to the bowl. Blend all the ingredients together in a blender.
6. Then add fish caviar.
7. Squeeze out the juice from the lemon.
8. Add lemon juice to the sauce, then pour in 1 tablespoon of olive oil. and each time punch in a blender to get a homogeneous mass.
9. This is the consistency of the sauce. Taste the sauce, and if needed, add some lemon juice to balance the taste.
