Ribs with potatoes in the oven is a tasty and hearty dish that is ideal for a family breakfast or dinner, as well as for a festive table. The ribs should first be marinated in spices for a couple of hours, this will enrich them with taste and generally improve the taste of the whole dish.

For my version, I chose homemade pork ribs. We also need potatoes, carrots, onions, sunflower oil and tomato paste, mustard, sour cream, table vinegar, pepper, meat seasoning and salt for marinade.

Pork ribs - 800 g
Potato - 1 kg
Carrot - 2 pcs
Onion - 2 pcs
Sunflower oil - to taste
Salt - to taste
Marinade for meat:
Sour cream - 100 g
Mustard - 1 tsp
Table vinegar (9%) - 2 tbsp.
Tomato paste - 1 tbsp.
Spices for meat - to taste
Black pepper - to taste

1. Wash the ribs, cut and put in a bowl. Add sour cream, tomato paste, mustard, vinegar, spices for meat and pepper.
2. Thoroughly mix the ribs, cover the bowl with a lid and refrigerate for 2 hours.
3. Cut onions into half rings and carrots into half circles.
4. Heat the oil in a frying pan and lightly fry the onions and carrots. Cool down.
5. Peel potatoes, cut into slices. Add fried onions and carrots to it. Sprinkle with salt and herbs.
6. Lubricate the baking dish with sunflower oil, put the vegetables. Remove the ribs from the refrigerator and put them on top of the potatoes, salt on top, pour the remaining marinade from the bowl on top of the ribs.
7. Cover the form tightly with foil, heat the oven to 190 degrees and bake the ribs for about 1 hour and 20 minutes. Then remove the foil and brown them for another 20-30 minutes. Taste the potatoes with a fork for readiness. Here are the ribs piping hot.
8. Serve ribs immediately with vegetables. Bon appetit!
