1. For cooking, yesterday's bread or two-day fresh bread is ideal. It is also possible to make toast from fresh bread, but keep in mind that pieces of fresh bread absorb egg batter rather quickly, become brittle and can fall apart, so you need to be more careful with them.
2. Cut a small hole in the center of 4 slices of toasted or thinly sliced bread.
3. And lay them on 4 whole slices of bread. You will get a fluffy toast, which will become a kind of form in which the egg will be baked.
4. In a separate container, combine 2 eggs and 2 tbsp. milk. Add some ground black pepper, 1-2 pinches of salt and lightly beat the mixture with a fork until smooth.
5. Line a baking dish with baking paper. If using non-oiled baking paper, grease the paper with a thin layer of vegetable oil.
6. Dip the prepared slices of bread in the egg-milk mixture on all sides.
7. Place the bread in the prepared baking dish and, if necessary, lightly press with the palm of your hand so that the slices fit snugly together.
8. Crack the egg into a cup or small bowl, and then carefully pour into the hole in the bread, being careful not to damage the integrity of the yolk. Repeat the procedure, filling all the croutons in the same way.
9. Sprinkle generously with grated cheese, being careful not to let the cheese get on the yolk.
10. Place the prepared croutons in an oven preheated to 180-200 degrees and bake for 8-12 minutes until the cheese is melted and lightly browned. If you prefer the yolk to remain liquid, you can slightly change the cooking sequence - put the croutons with cheese in the oven for 5-7 minutes until the cheese is melted, then add the eggs and bake for another 3-5 minutes until the desired degree of doneness of the yolk.
