Steak New York

New York steak is also known as Striploin or Club steak.

This is a psoas muscle with a pronounced beef flavor, usually with a thick layer of fat around the perimeter. This steak (unlike the ribeye, for example) has a tougher meat, because it contains practically no fatty fibers. This time I was lucky to buy a striploin, already stripped, with a small layer of fat around the perimeter, for the price of a regular one.

To prepare the New York Steak, we need the products in the photo. The meat must be cut into a thickness of 2-2.5 cm.

Ингредиенты

Beef steak - 1 pc. (400 g)

Rosemary - 1 sprig

Garlic - 4-5 pcs.

Hot pepper - to taste

Sea salt - to taste

Ground black pepper - to taste

Olive oil - 1.5 tsp

Butter - 1 tbsp.

1. Brush the steak with vegetable or olive oil on both sides.

2. Heat the pan, fry the steak on both sides for 3 minutes. Fry the sides too, especially the side with the fatty layer. It is better to turn the steak every minute, sealing the juices inside.

3. Wash and dry rosemary. You can not peel the garlic, crush it with the back of a knife, chop the hot pepper.

4. Add garlic, rosemary, hot peppers and butter to the skillet with the steak. Drizzle the steak with meat-and-spicy sauce, cook for another 1.5 minutes on each side

5. Remove the steak from the pan and let it rest for a few minutes so that the juices are evenly distributed throughout the steak. Now you can salt and pepper it. I salt with coarse sea salt.

6. Serve with salad leaves and your favorite sauce. New York steak is best cooked to the state of Rare or Medium-rare, with this roasting it turns out to be softer and more tasty.
