Fresh and Juicy: 5 Summer Watermelon Snacks

Summer is the time to feast on watermelons and experiment in the kitchen.

Watermelon is the summer berry. It is loved by many for its sweet taste, fresh feeling and low calorie content. And how about complementing the watermelon sweetness and freshness with the taste of other ingredients? We offer several recipes for summer dishes and drinks in which this summer berry is the main component:

Salad with watermelon and chicken

This simple dish can be an independent lunch or an appetizer at a party. For cooking, you need 450 gr. chicken breast (it is better to remove the skin, separate the bones), 1 cup balsamic vinegar, 1 tbsp. olive oil, 3 tsp all-purpose seasoning, 2 cups watermelon pulp, a quarter cup of chopped almonds, half a tablespoon of any cheese.

Pour the balsamic vinegar into a small saucepan and bring to a boil. Reduce heat and simmer for 15-20 minutes until it starts to turn into syrup. Sprinkle chicken breast with seasoning and fry, then cut into cubes. Put the spinach on the bottom of the dish, and the rest of the ingredients on top. Season with balsamic and olive oil.

Salad with watermelon and feta

A light salad, worthy of becoming an addition to lunch or dinner. You will need 1 cup of quinoa, 15 basil leaves, one and a half cups of watermelon pulp, juice of one lime, 1 tbsp, honey, 2/3 cup of chopped feta, salt and pepper to taste.

Boil the quinoa, let cool, add salt and pepper. Salt the pulp of watermelon, pour over with honey. Combine all ingredients, pour over lime juice and stir.

Watermelon and blueberry salsa

A sweet snack that both kids and adults will love. You will need 4 tomatoes, half an onion, 1 cup watermelon pulp, 1 seedless jalapeno, 1/2 cup blueberries, 3 tbsp. chopped cilantro, the same amount of lime juice, salt - to taste.

Grind tomatoes, onions and jalapenos in a blender, but do not liquefy. Add the rest of the ingredients to this mixture, cover with a lid and refrigerate for half an hour so that the aroma opens.

Watermelon and kiwi ice cream

Homemade popsicles are not only healthier, but also much tastier than the ones offered in stores. For cooking, you need only two ingredients: 5 sliced ​​kiwi and mashed pulp of half a watermelon.

Kiwi cut into slices. Place kiwi slices into ice cream molds and fill them with watermelon juice. Insert popsicle sticks into the blanks and send everything to solidify in the freezer. After 4 hours, eco-ice cream is ready.

Spicy salad with watermelon

The perfect summer dish! For cooking, you need to take 1 bunch of watercress, 2 cups of watermelon pulp, a quarter cup of pumpkin seeds, 1/8 cup of grape seed oil, 2 tbsp. l. lime juice, a quarter tsp. sea salt, 2 tablespoons finely chopped cilantro, 1 tsp. maple syrup, lime half.

Combine grape seed oil, lime juice, salt, cilantro, and maple syrup ahead of time for a salad dressing. Wash the watercress, dry it, add chopped watermelon and pour in the dressing. Roast pumpkin seeds, lightly salt and pour in lime juice, then sprinkle them on the finished dish.
