It does not matter whether it is summer with its abundance of fruits and berries or snowy winter - a piece of fragrant air charlotte will come in handy at any time of the year and will leave few people indifferent. Golden crust, light fluffy biscuit and an abundance of juicy and fragrant pieces of apples - how can you resist?!
For me, as for many, since childhood, charlotte has been associated with warmth and homeliness, simple joys of life, cozy family tea parties. The soothing warmth emanating from the oven, the aroma of cinnamon and apples, the smell of fresh pastries in the kitchen every time make me freeze in joyful anticipation.

Chicken egg - 5 pcs.
Sugar - 200 g
Vanilla - 1 tsp
Flour - 160 g
Baking powder - 1 tsp
Apples - 1 kg
Starch - 2 tbsp.
Cinnamon - 1-2 tsp
Lemon juice - 1 tsp
Salt - 1 pinch
Vegetable oil - for greasing the mold

1. To cook Charlotte pie with apples in the oven, prepare the ingredients according to the list.
2. Separate the yolks from the proteins. Mix the yolks with sugar and vanilla extract (flavor or vanilla sugar). Beat at low speed for 7-10 minutes, until airy foam forms and sugar dissolves.
3. Add a pinch of salt and a few drops of lemon juice to the proteins. Beat for a few minutes - until a lush, shiny, stable foam. I do not measure the time, but just carefully turn the protein container over when the mass thickens. If the mass is stable, the proteins do not flow out and do not fall out of the container - it's ready.
4. Add the flour sifted with baking powder to the beaten yolks and beat for another 1-2 minutes. Add other seasonings and spices as desired.
5. Gradually adding 2-3 tablespoons, mix the whipped proteins into the dough. Gently knead the dough from the bottom up, keeping it fluffy and airy.
6. Peel apples and seeds, cut into small pieces. To keep the apple slices from browning, drizzle them with lemon juice. Add a few tablespoons of starch, ground cinnamon and mix everything well.
7. Lubricate the baking dish with vegetable oil and line with baking paper or sprinkle with flour.
8. Put 1/3 of the dough into the mold and add the apples.
9. Fill the apples with the remaining dough.
10. Place the charlotte with apples in the oven, preheated to 180 degrees, and bake the pie for 45-50 minutes. Knowing the features of my oven, after 10-15 minutes I cover the charlotte with foil.
11. Check the readiness of the cake by piercing it with a wooden skewer or match. If the match comes out dry, the cake is ready! If I have the patience, I leave the cake for another 10 minutes in the off cooling oven.
12. Sprinkle the finished cake with powdered sugar or decorate according to your mood.
