Mannik with pumpkin on sour cream

I suggest you bake a delicious pumpkin mannik on sour cream. Such a mannik can be served for dessert or for breakfast with a cup of tea or coffee.

For convenience, I weighed all the ingredients on a scale, but if suddenly you didn’t have them nearby, then you can measure everything with a glass of 200 ml. To prepare manna with pumpkin on sour cream, prepare the necessary ingredients from the list.

Semolina - 260 g

Sour cream - 230 g

Pumpkin - 300-320 g

Sugar - 200 g

Eggs - 2 pcs.

Lemon juice - 1 tbsp

Cinnamon - 0.5 tsp

Baking powder - 1 tsp

Salt - a pinch

1. Peel and grate the pumpkin on a fine grater. In the ingredients, I indicated the weight of the peeled pumpkin.

2. Measure sour cream into a deep bowl, add semolina and mix well.

3. Squeeze the juice from the grated pumpkin into a glass, add the pumpkin pulp to the mixture of semolina and sour cream, mix well again.

4. Add half the sugar to the bowl. Separate the yolks from the proteins, add the yolks to the total mass, then cinnamon and baking powder, mix everything thoroughly.

5. Beat the whites with salt with a mixer into a strong foam. Add proteins to the total mass.

6. Stir the mixture gently with a spoon.

7. Cover the form with parchment and pour the dough into it.

8. Preheat the oven to 180 degrees and bake mannik with pumpkin on sour cream for 50 minutes.

9. To pour pumpkin juice into a ladle, add lemon juice and remaining sugar, bring to a boil and cook for 3 minutes. Pumpkin juice should be 100 ml.

10. If suddenly it turned out less, then you can add orange juice or, in extreme cases, water. My pumpkin was very juicy and there was enough juice. Pour hot syrup on top of manna.

11. Distribute the syrup evenly and leave the manna in the mold for 30 minutes.1

12. Then the mannik can be cut into portions and served.
