A quick-to-make vegetable green salad with crispy radishes and cucumbers is good as an appetizer and as a side dish for meat dishes.

1. Before starting the preparation of the salad, wash the vegetables and herbs and let the water drain. If the tops of the radish are young, then you can put it in the salad.

2. Cut the radish and cucumber into thin circles, for convenience, you can use a grater, such as a mandolin.

3. To enhance their flavor, pine nuts can be lightly browned in a dry frying pan for several minutes, stirring constantly.

4. Prepare a simple lemon dressing. To do this, in a jar (or other suitable container), mix lemon juice, olive oil, white balsamic vinegar, salt and black pepper. We close the jar and shake it well so that everything is mixed and the salt dissolves. We take salt to taste, remembering that the dressing should be rich in taste.

5. The components of the salad are ready, you can link. Arrange the arugula on a serving platter. It can be coarsely chopped, but it is better to pick it with your hands into a plate. If we use radish tops, we also add it along with arugula.

6. Put radish and cucumber circles, feta cut into small cubes, and pine nuts on lettuce greens.

7. Generously sprinkle the salad with finely chopped dill and parsley and pour over the dressing.

8. Green salad with radish is ready, lightly mix it with two forks so that the dressing is evenly distributed.

9. You can prepare such a salad and dressing a few hours before serving and store in the refrigerator (separately). But it is better to water the salad dressing immediately before serving.
