Tender and melting in your mouth, or crispy, most importantly - cooked with love, they will delight everyone! Today we will cook openwork pancakes in milk with boiling water. They will certainly decorate both the festive table on Maslenitsa and the usual breakfast! To prepare them, I take the simplest ingredients: milk, eggs, premium wheat flour, sugar and salt, and vegetable oil. Pancakes become perforated and openwork due to the addition of soda and boiling water to the dough.

Milk - 1 glass

Boiling water - 1 cup

Eggs - 2 pcs.

Flour - 1 cup

Sugar - 2 tbsp.

Salt - 1/2 tsp

Vegetable oil - 2 tbsp.

Soda - 1 tsp

1. Break eggs into a bowl. We add salt. Beat with a whisk until the mass increases in volume and bubbles appear (about 3 minutes). You can use a mixer.

2. Pour sugar and continue to beat.

3. Next, pour in the milk, mix.

4. Sift the flour in parts and knead the dough for pancakes.

5. It turned out to be the consistency of condensed milk. Leave it aside for about an hour so that the lumps disperse - the dough will become homogeneous.

6. After an hour, you can continue cooking.

7. Dilute soda in a glass of boiling water. And pour the liquid into the dough, stirring it.

8. Next, start the oil, mix again until maximum uniformity.

9. The dough for openwork pancakes turned out to be quite liquid.

10. We heat the pan well and coat it with a small amount of oil for the first pancake. Let's start baking.

11. Bake pancakes on both sides until golden.
