Ramson with lard for the winter

Preparing wild garlic with bacon for the winter is very easy if you have a blender or food processor available, in extreme cases, a meat grinder. I do not like to use a meat grinder, as I prepare a snack in small quantities, but if you have a large family and you like such savory preparations, then it is ideal for large volumes of food.

I prefer to create it with salted lard, but it is quite possible to prepare the blank with fresh lard - in this case, be sure to add 1.5 tbsp to the blender bowl. fine salt, but not iodized! Salo with wild garlic is stored in jars only in the cool, not in the pantry. If placed in a warm place, the workpiece will deteriorate. Let me remind you once again that it is not clogged with a key for conservation, but simply closed jars or containers with lids.

Ramson - 2 bunches (60 g)

Salted pork fat - 400 g

1. Be sure to cut off the skin from the pieces of fat - the workpiece should not contain hard elements. Cut the lard into small pieces so that it is easily crushed.

2. Thoroughly rinse the wild garlic in water from dirt. Cut into medium sticks and add to the container to the fat.

3. Put everything together in the chopper bowl. If the fat is fresh, then at this stage add salt to the bowl.

4. Grind everything for 4-5 minutes on a pulsating mode. From time to time turn off the appliance, open the lid and lightly stir the contents so that it is evenly crushed.

5. Put the resulting fragrant mass into clean and dry jars, containers. Seal with lids and refrigerate. Wild garlic prepared for the winter with bacon can be stored for at least 4 months from the date of preparation. It is served as a bread spread for the first hot dishes: borscht, cabbage soup, kharcho, etc. It can be added when preparing second courses.
