Lush pancakes from zucchini on kefir

I really love pancakes with zucchini - juicy, lush, satisfying ... I suggest you cook them for dinner too!

Pancakes with zucchini are best prepared from young juicy zucchini, in which seeds have not yet formed. If you need to dispose of an old zucchini, then it is better to remove all the seeds and only then grate the zucchini pulp. We do the same with the peel: if the zucchini is young, we rub it with the peel, if it is old or the peel is rough, it is better to cut it off.

Ингредиенты

Zucchini - 1 pc.

Flour - 2-3 tbsp.

Chicken egg - 1 pc.

Kefir - 100 ml

Baking soda - 1 tsp

Onion - 1 pc.

Dill greens - 10 g

Dried garlic - 1 pinch

Salt and pepper - to taste

Vegetable oil - 2-3 tbsp. (for frying)

1. Wash and grate the zucchini on a medium grater.

2. Finely chop the dill, cut the onion into a smaller cube.

3. If your zucchini is very juicy, it is better to squeeze the liquid from it. Use a sieve for this.

4. Put the grated zucchini pulp, chopped onion and dill into a bowl.

5. Pour kefir into a bowl.

6. We drive a chicken egg into the dough for pancakes.

7. Add spices: salt, ground black pepper and dried garlic powder. You can also add fresh garlic if you prefer.

8. Add baking soda to the dough. Mix all ingredients

9. Gradually add flour and knead a thick dough for pancakes.

10. This is how thick the dough should be. If your dough is thinner, add a little more flour to it.

11. Heat the vegetable oil in a frying pan. We spread the dough in a pan with a spoon and fry our pancakes for 1-2 minutes.

12. Turn the pancakes over to the other side and fry them for another 1-2 minutes.

13. We spread the fried pancakes on a paper towel so that excess oil is absorbed into it.

14. Lush pancakes from zucchini on kefir are ready.
