Coke marmalade

Coca-Cola marmalade can be prepared with either starch-type thickeners or gelatin. Agar-agar is not optimal for this dish: the complex of substances contained in the drink prevents stable solidification. In general, only liquid marmalade can be prepared on agar-agar. The most beautiful, stable, transparent and brilliant is on gelatin. The dish turns out to be very spicy - due to the fact that the cola is not subjected to heat treatment, it retains a slight "twist" even in the hardened form.

Cola - 450 ml

Gelatin - 7 sheets

Water - for soaking gelatin

Not necessary:

Sugar - 3 tbsp.

Citric acid - 1 tsp

1. For 450 ml of cola, you should take at least the amount of gelatin that is recommended for gelling 500 ml of liquid, or better, a little more - we cut marmalade, we don’t need it to flow. So, I have - 7 sheets per 450 ml of cola. Water for soaking gelatin is a technological component. If you want to surprise guests with one interesting special effect, then you can also take a few tablespoons of granulated sugar and a little citric acid, but this is absolutely not necessary, and they do not go away completely.

2. Soak in water, squeeze out and dissolve the gelatin according to the instructions on the package.

3. Combine gelatin with cola according to the instructions on the gelatin package (for gelling cold desserts), gradually adding cola to warm gelatin. Place the container in the refrigerator to chill. After 2 hours, you will get already stable coca-cola marmalade.

4. Cut the marmalade into cubes or diamonds. Well, or even finely-finely, up to the point that knead with a fork - so that you can take it with a spoon and spread it, put it somewhere.

5. An interesting special effect that can surprise guests: if you roll such marmalades in a mixture of granulated sugar and citric acid, then the crystals will completely dissolve in just a couple of minutes, the surface of the marmalades will remain transparent, but at the same time it will become sour and more intense in taste than, so to speak, their inside. It turns out very interesting, few people can guess how it's done.
