Let's start with the fact that ginger has a very wide range of useful properties. Tired of coffee and tea! This is a great alternative, especially in the summer. A charge of vitamins, energy and good mood - that's what awaits us after taking Ginger Ale.
We have two drink options. Let's start preparing the ingredients.
Ginger ale: a refreshing drink for the summer

Low alcohol ginger ale:
Ginger root - 2-2.5 tablespoons
Water - 2 liters
Sugar - 150-200 g
Yeast - 0.5-1 tsp
Lemon - 1 pc.
Non-alcoholic ginger ale:
Ginger root - 4-5 cm
Lemon - 1 pc.
Carbonated water - 1.5-3 liters (to taste)
Sugar - 4-5 tbsp. (taste)
Mint/basil, for serving (optional)

Peel the ginger from the peel and grate it on a fine grater.
Low alcohol version:
1. Boil 2 liters of water.
2. as soon as the water boils, turn off the heat and add grated ginger and sugar to it. Stir to dissolve sugar.
3. Add lemon juice and cool to a temperature of 36-38 degrees.
4. Add yeast.
5. Mix everything thoroughly and pour into bottles leaving a couple of centimeters to the neck. The drink must be left for 1-2 days, so that it is well infused. After a couple of hours, the bottle will begin to harden, this is a great signal that the fermentation process has started. When the bottle becomes quite hard, it's time to transfer it to the refrigerator. It costs about 3-4 days to insist until fully cooked.
6. The finished drink must be filtered and bottled again, after a couple of hours you can try it.
7. This ale contains about 2% alcohol.
Non-alcoholic version:
1. Place the already grated ginger root in a small container. Add sugar and lemon juice.
2. Pour in 1 cup of carbonated water and mix everything until the sugar dissolves.
3. We leave the already prepared mixture for 5-10 minutes, so that it is infused.
4. Filter the drink.
5. Add a couple of slices of lemon, mint and basil to the drink container.
6. Pour in the concentrated ginger mixture and dilute everything with sparkling water.
