Creamy cauliflower soup with cream is a great lunch dish. This soup is prepared very quickly, it turns out thick, fragrant, very healthy. You can add cheese and other vegetables to the soup, I prefer the option with the addition of potatoes.

To prepare creamy cauliflower soup, it is better to take a fresh young head of cauliflower. The fat content of the cream does not matter.

Cauliflower - 500 g
Potato - 150 g
Onion - 1 pc.
Butter - 30 g
Cream - 100 ml
Salt and ground black pepper - to taste

1. Onion cut into small cubes.
2. Melt the butter in a saucepan and fry the chopped onion in it for 7-8 minutes until soft.
3. Peel the potatoes and cut into very small cubes. The smaller the pieces, the faster the whole dish will cook.
4. Put the chopped potatoes in a pan with fried onions.
5. We disassemble the cauliflower into inflorescences and rinse under running water.
6. Put the cauliflower inflorescences in a saucepan with potatoes and onions, add enough hot water to cover the vegetables. Also add salt and black pepper to taste. Let the water boil again and cook the soup for 20-25 minutes.
7. Take a glass of broth from the soup. Salt the rest of the liquid. We puree the vegetables with a blender, gradually adding the broth until the soup becomes the thickness you need.
8. Pour the cream into the soup, mix everything again and heat the soup on the fire for 2-3 minutes (do not boil !!)
9. Creamy cauliflower soup is ready. Pour the soup into serving bowls and serve with croutons or fresh bread.
