Today we are preparing Kyrgyz kesme soup. I must say, I realized a long time ago that many recipes of Asian cuisine are very similar and overlap with each other in the way they are processed or in the composition of the ingredients. Something similar exists in Uzbek cuisine.
Kesme is noodles, and how to cook it depends on the preferences and hands of the hostess. Like shurpa, there are two types of kesme: kuurma (fried) and kainatma (boiled). Any vegetables and even potatoes can be added to kesme soup, but noodles should be the main ingredient. It can be prepared by hand, kneading the dough from water and flour with salt, or you can buy it ready-made.

Lamb - 350 g
Onion - 1 pc.
Carrot - 1 pc.
Sweet pepper - 1 pc.

Green onion - 4 stalks
Garlic - 4 cloves
Coriander - 0.5 tsp
Hot pepper - 0.5 tsp

1. You can take lamb on the bone or just the pulp, as well as both at the same time. Cut the meat into comfortable pieces and fry in vegetable oil until golden brown. Often fat tail fat is used instead of vegetable oil, it depends on the preferences and strength of your body. Salt the meat after frying.
2. Add the onion and fry everything together until the onion is soft.
3. Add tomato paste, spices, mix and fry for another three to four minutes, stirring constantly.
4. You need to prepare the rest of the vegetables in advance. Cut sweet pepper, radish and carrot.
5. Pour the meat with water or broth. Boil. If necessary, remove the foam. Cook until the meat is soft.
6. After about 30-40 minutes, the lamb becomes very soft and you can add the rest of the vegetables. Cook for about 10 more minutes.
7. Next, dip the noodles into the soup and cook until tender. Homemade noodles, pulled or sliced, cook very quickly. Store-bought, as written on the package.
8. Sprinkle the finished soup with any herbs, in this case it is green onions, and add chopped garlic. Stir and bring to the desired taste, then turn off the heat.
9. Kyrgyz kesme soup is ready, serve it right away.
