Pumpkin soup has a beneficial effect on your organs and mood. Therefore, we bring to your attention a recipe with useful properties. To do this, we need to prepare all the necessary ingredients and enjoy cooking.

Pumpkin - 0.8–1 kg

Garlic - 4-6 cloves

Salt - to taste

Ground black pepper - to taste

Vegetable oil - 2-3 tbsp.

Butter - 1-2 tbsp.

Onion - 1 pc.

Ginger root - to taste (from 2-3 centimeters or more)

Hot pepper - to taste

Broth or water - 0.8-1.3 l

Lemon or lime juice - to taste

Additionally:

Fresh herbs - to taste

Cream or sour cream - to taste

Nuts - to taste

1. Cut the pumpkin and make cross-shaped cuts on the pieces, cut the flesh almost to the very crust. Brush the pieces with vegetable oil, salt and pepper over the eye, and add a couple of unpeeled garlic cloves.

2. Bake the pumpkin for 35-35 minutes preheating the oven to 200-220 degrees.

3. Meanwhile, add vegetable oil and 1/2 tablespoons of butter to the pan. In hot oil, add onion and fry until golden brown. Then add the peeled roasted garlic cloves and sauté all together for another 1-2 minutes.

4. The next step is to separate the pumpkin from the peel.

5. Add the finished pumpkin to the pan with the onion, also add the finely grated ginger root and a little hot pepper.

6. Add broth or water to the pan (bring to a boil) and puree with a blender.

7. Turn off the fire. Add salt and pepper to taste and some lime juice.

8. Ready soup can be decorated with herbs. Serve the soup with sour cream or cream, sprinkle with nuts and chili beforehand.
