Temari is sushi in the form of balls, koloboks or truffles for one bite. You can cook them with tools or by hand. I will show both options in this step-by-step recipe. Temari sushi will especially appeal to those who do not like the taste of nori, because it consists only of rice and seafood. As a filling, almost any sea fish of weak salt or smoked, as well as shrimp and other seafood can be used.

Lightly salted fish - 300 g

Cook rice for sushi according to the rules for cooking rice in a saucepan or in a slow cooker, there are recipes on the site.
Cut the fish into thin slices and small squares or rectangles.
First way
Lay the fish slices on the bottom of a special tool, such as silicone.
Pack portions of rice on top. Let them set for a few minutes and then remove
Second way
Lay a slice of fish on cling film, and place a small ball of rice on top.
Wrap this blank with a film and squeeze it into a ball shape.
Remove the film and the stuffed rice ball is ready.
By hand, I got a little more temari than in the device.
Serve temari on their own or as part of an assortment of sushi and rolls.
Serve the temari with ginger pickled soy sauce and sprinkle with sesame seeds if desired.
