Pumpkin baked with potatoes in the oven

Pumpkin - 0.5 kg

Potato - 0.5 kg

Cheese - 150 g

Onion - 2 pcs.

Garlic - 6 cloves

Butter - 2 tbsp. (with slide)

Vegetable oil - 2 tbsp.

Salt - to taste

Ground black pepper - to taste

Dried Provence / Italian herbs - 2 tsp

Parsley - 2 pinches (to serve/optional)

1. Prepare the ingredients in advance. Peel and cut the potatoes and pumpkin into 0.5 cm thick slices. Cut the onion into rings. Finely chop the garlic. Grate the cheese.

2. Melt 2 tbsp. butter. Add 2 tbsp. vegetable oil, 2-3 pinches of salt, a little ground black pepper, dried herbs, chopped garlic and 2/3 grated cheese. Mix well.

3. Place the potato and pumpkin slices in a bag or deep container.

4. Add seasoning mixture and oil, seal the bag tightly and mix everything again.

5. Arrange the potato and pumpkin slices in a baking dish, alternating with the onion rings.

6. Pour the remaining oil and herb mixture into the baking dish and use a brush to spread the oil over the surface of the vegetables, being careful to get most of the cheese and herbs between the slices.

7. Place the vegetables in an oven preheated to 200-210 degrees and bake for 30-40 minutes, until soft.

8. Then sprinkle the vegetables with the rest of the grated cheese and place in the oven for another 5-7 minutes to melt the cheese.

9. Pumpkin baked with potatoes in the oven is ready to serve. Sprinkle the dish with a pinch of chopped fresh herbs and serve.
