If you've never made hollandaise sauce before, don't panic. The sauce is pretty simple.
Spicy eggs Benedict for breakfast

Bacon slices - 4 pcs.
Maple syrup - 2 tbsp
Cane sugar - 2 tbsp. l.
Cayenne pepper - 1/4 tsp
DUTCH SAUCE
Large egg yolks - 2 pcs.
Fresh lemon juice - 1 tbsp. l.
Butter - 1/2 tbsp.
Chili powder - 1 tsp
Smoked paprika - 1/4 tsp
POACHATED EGGS AND ASSEMBLY
Large eggs - 4 pcs.
English muffins, cut and toasted - 2 pcs.
Softened butter, for buns
A small bunch of arugula - 2 pcs.
Medium-sized tomato, sliced - 1 pc.
Freshly ground black pepper

1. In a bowl, mix maple syrup, brown sugar and cayenne pepper.
2. Lubricate the bacon with the prepared mixture and fry in a hot pan on each side.
• HOLLAND SAUCE
1. Fill a medium saucepan with water up to the middle and bring to a boil. In a separate, smaller saucepan, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water so that the bottom of the bowl does not touch the water.
2. While whisking, slowly pour in the melted butter. Continue whisking until the butter is combined and the mixture is smooth and creamy, 1 to 2 minutes.
3. Remove bowl from heat and add chili powder and paprika; season with salt. If the mixture thickens too much, add 1 teaspoon of hot water at a time to thin it out.
• POICHED EGGS AND ASSEMBLY
1. Bring a large pot of water to a boil over medium heat. Crack 1 egg into a small mold and gently drop into boiling water. Repeat quickly with the remaining eggs and cook for 3 minutes. Transfer the eggs with a slotted spoon to a plate lined with paper towels.
2. Brush the cut sides of the buns with butter and sprinkle with arugula on top. Put a slice of tomato on top; season with salt and black pepper. Top with 2 slices of bacon and 1 poached egg. Drizzle with a spoonful of hollandaise sauce.
