Today I propose to cook and try one of the simplest and most delicious dishes of Lebanese cuisine. Let's cook Sweet potato harra (spicy fried potatoes) - a versatile side dish that goes well with vegetable, meat, and fish dishes, and can also serve as a savory snack on its own or a hearty snack.

Potato - 900 g

Olive oil 3-4 tbsp

Salt - to taste

Ground black pepper - to taste

Garlic - 7-8 cloves

Red pepper - 0.25 tsp

Paprika - 1 tsp

Ground coriander - 1 tsp

Parsley / coriander - 35 g

Lime juice - 1 tbsp. (optional)

1. Cut well-washed potatoes into small cubes. It is better to take potatoes of a variety that is more suitable for frying.

2. Transfer the chopped potatoes to a deep container. Add 1-2 tbsp. olive oil, salt and black pepper to taste. Mix well.

3. Place the potatoes on a baking sheet lined with parchment paper and spread evenly. Place the baking sheet with the potatoes in a preheated oven at 200 degrees and bake until tender, about 40 minutes.

4. After 20-25 minutes, the potatoes must be mixed once in order for them to brown evenly.

5. Prepare the spicy potato dressing. Since the dressing is preparing very quickly, it is better to cook it when the potatoes are ready. Heat the pan over medium heat and pour in 1-2 tbsp. olive oil. Add finely chopped garlic and, stirring, fry it for 30 seconds, until golden brown (the fire can be slightly reduced).

6. Then add ground paprika, ground coriander and finely chopped fresh parsley/coriander to the pan. Stir-fry for 1 more minute over low heat.

7. To the finished dressing, if desired, add lime juice, and sweat the mixture over low heat for another 30 seconds.

8. Add Baked Potatoes to the Pan

9. Mix everything thoroughly and add ground pepper to taste and, if necessary, more salt. Stirring, heat still 1 minute.

10. Place the spicy Lebanese fried potatoes in a deep dish and serve hot, sprinkled with a pinch of fresh herbs if desired.
