Today we will cook pork under the glaze. In the recipe, marinating meat and baking takes most of the time, the cooking process itself is quite simple and definitely worth a try.

Melting in your mouth, tender minced pork with a sweet and spicy glaze, what could be better? Serve this simple, pre-cooked dish for a festive table or for a delicious and satisfying dinner.
Pork with chipotle and honey glaze

Trimmed pork shoulder - 1.2 kg (weight after removal of the skin, ask your butcher about it)
Ketchup - 75 gr + 1 tbsp. l.
Chipotle Paste - 3 tbsp. l.
Honey - 3 tbsp. l.
Red wine vinegar - 1 tbsp. l.

1. Two days before (and at least 2 hours before) mix 75 g of ketchup with 2 tablespoons of chipotle, 2 tablespoons of honey and vinegar. Rub the pork all over and place in a food bag (or bowl) in the fridge to marinate, turning occasionally.
2. Preheat the oven to 160°C/140°C with convection/gas. Transfer pork to a tight-fitting baking dish and brush with excess marinade and 100ml of water. Cover with foil, making sure the pork is sealed but not touching the foil, and bake for 4 hours.
3. Raise the oven temperature to 200C/180C convection/gas. Remove the foil and put the pork back in for 30 minutes until it is crispy and sticky on the outside.
4. Remove the pork from the mold and use two forks to mince the meat. Mix an additional 1 tablespoon of ketchup with the remaining chipotle and honey and toss with the minced meat with a little seasoning before serving.
