Eggplant appetizer with feta and garlic

I don't know about you, but I love eggplant! When the season starts, I start making a lot of different appetizers and eggplant salads. One of my favorite snacks - eggplant with feta and garlic - I want to bring to your attention.

In this version, I used Feta cheese, because I love it the most, but cheese or suluguni is perfect. You can even cook with cottage cheese, it will also be very tasty!

Cut the eggplant into 1 cm thick slices, put in a bowl and season with salt. Leave for 30 minutes.

Eggplant - 2 pcs.

Tomato - 1 pc.

Feta cheese - 120 g

Sour cream - 1-2 tbsp.

Garlic - 3-4 cloves

Salt, pepper - to taste

Fresh dill - 0.5 bunch

Sunflower oil - for frying

Parsley - for serving

1. Then blot the eggplants with paper towels and fry in a pan with a minimum amount of sunflower oil.

2. Put eggplants on napkins to remove excess fat.

3. Mash feta with a fork, add sour cream, chopped dill and garlic. Add salt to taste, as the cheese already contains salt. Mix the mass well.

4. Spread the filling on the eggplant circles - about a tablespoon.

5. Cut the tomato into slices, spread it on top of the cheese mass. Sprinkle with salt and pepper from the grinder. Decorate with greenery.
