There are a great many secrets of cooking fish soup: from ruffs, from perches, fisherman's, triple, bishop's, etc. Each fisherman has his own "signature" recipe for preparing this specific dish. Despite the abundance of recipes, there is still one general and mandatory rule: the fish must be fresh, without foreign smell. The recipe for this fish soup is offered by Finnish fishermen.
To prepare fish soup, you need to take fillet and ridges of oily fish (butterfish, trout or salmon), onions, carrots, potatoes, 10% fat cream, bay leaf, allspice peas, ground black pepper, dill, water and salt.

Salmon ridges - 500 grams;
Onions - 1 pc;
Fresh carrots -1 pc;
Cream 10% concentration - 1 cup;
Bay leaf - 1 pc;
Allspice - 3 pcs;
Salt - 1 teaspoon;
Ground black pepper - 0.5 tsp;
Dill greens - 1 bunch;
Potatoes - 3 pcs;
Water - 2 liters.

1. Peel the carrots and cut lengthwise into 4 pieces.
2. Peel the onion and cut in half.
3. In 2 liters of cold water, put the ridges, onions, carrots, bay leaves and allspice.
4. Boil the broth for 40 minutes, then add the fish fillets and cook for another 10 minutes.
5. Carefully remove the fish and vegetables, and strain the broth.
6. Peel and cut potatoes into cubes.
7. Bring the broth back to a boil, put the potatoes in it and cook for 15-20 minutes.
8. As soon as the potatoes are soft, add the fish fillet, pour in the cream and salt to taste. Boil the ear for 5 minutes.
9. Remove the finished fish soup from the stove, sprinkle with chopped dill, close the lid and let it brew for 7-8 minutes.
10. When serving, sprinkle the ear with black ground pepper.
