It is impossible not to love the red mullet, despite the fact that it needs to be cleaned of scales and that there are a lot of bones in it, it has such juicy and tender meat. I found a great way to cook red mullet, this method is simple and very easy. Red mullet baked with rosemary, lemon and olives - what I call "simple, but tasteful", and what a taste!!!

Red mullet - 500 g
Lemon - 0.5 pcs.
Rosemary - 1-2 sprigs
Olives - 5-8 pcs.
Olive oil - 1 tbsp
Garlic - 1 clove
Salt - to taste

1. Use the back of a knife or a fish-cleaning knife to remove scales from the fish.
2. Cut the fish along the belly and remove all the insides. Rinse fish under running water and pat dry with paper towels.
3. Salt the red mullet outside and inside.
4. Cut the olives into rings. Cut the garlic into thin slices. Remove all leaves from rosemary sprigs.
5. Grease a baking dish with olive oil. Put carcasses of red mullet in it. Arrange olive slices on top of the fish.
6. Add rosemary leaves and garlic cloves.
7. Cut 3 slices from half a lemon and put them on the fish, squeeze the juice from the remaining lemon and pour over the fish. You should also lightly drizzle the fish with olive oil.
8. Send the form with the red mullet to the oven preheated to 170 degrees C for 15-18 minutes. The fish cooks very quickly and the cooking time will depend on the size of the fish.
