Chicken drumsticks - 1 kg
Dry white wine - 150 g
Water - 1 glass
Tomato paste - 2 tbsp.
Salt - to taste
Pepper - taste
Olive oil - 30 g
Butter - 1 tbsp.
Eggplant - 1 pc.
Tomato - 2 pcs.
Garlic - 2 cloves
Parsley - 1 bunch
Potatoes - 6 pcs.
Flour - 2 tbsp

1. Wash the chicken, dry it, cut into pieces, fry in olive oil with the addition of butter until golden brown. I prefer to cook this dish with chicken drumsticks or thighs.
2. Pour in wine, water (or broth), add tomato paste, stir the sauce until smooth, salt and pepper. Cover with a lid and cook over low heat for 30 minutes.
3. When the chicken is ready, add the greens, taste the gravy, if it is too sour, add some sugar.
4. Wash eggplant, dry, cut into slices, salt. Roll in flour and fry in vegetable oil until tender.
5. Cut the tomatoes, lightly fry in a small amount of olive oil.
6. Add garlic and parsley, salt. In another pan, fry the potatoes, cut into strips.
7. Put eggplants on the bottom of the dish, tomatoes with garlic and herbs on top of them, put chicken on vegetables, pour gravy. Put fried potatoes next to it. Melbourne chickens are ready, enjoy!
