The preparation of such a dessert will require a minimum of effort from you. Any berry or fruit jam or homemade berry sauce is used as a base, the top is an air cap of whipped proteins, which is lightly browned in the oven until golden brown.

As a result, in just a few minutes, on your table - the most delicate, airy, light and insanely appetizing dessert - a protein cap, slightly touched by golden highlights, a little denser on the outside, a little viscous inside and very airy, combined with fragrant sweet and sour berry syrup. Their combination creates a pleasant contrast and gives an exciting depth to the taste sensations.

Ингредиенты

Egg white - 2 pcs.

Sugar - to taste

Strawberry jam or sauce - 2 tbsp

Fresh berries (strawberries) - to taste

Рецепт

1. Separate the whites from the yolks and beat until soft peaks.

2. Gradually add sugar to the whites whipped to soft peaks and continue to beat until hard peaks, i.e. until the mass shines and becomes stable.

3. In order to simplify this process as much as possible, use room temperature proteins, also, if there is a choice, use not fresh eggs for whipping, but those that have already lain in the refrigerator for several days - such proteins will beat faster. To speed up the process of warming the proteins, place the eggs in a container or cup of warm water, after a few minutes they will reach room temperature and are ideal for whipping. I use this technique not only when preparing desserts, but also when preparing various sauces and mayonnaise.

4. In a baking dish, measure out 1-2 tablespoons of berry sauce or jam.

5. Top with whipped squirrels.

6. Using a pastry bag or a spoon, give the top of the future strawberry soufflé the desired shape.

7. At this stage, the dessert molds can be placed in the refrigerator and stored until the dessert time comes, or sent to an oven preheated to 200–220 degrees and baked for 2–4 minutes. It is not worth baking for a longer time, because in this case the protein mass will increase in volume and lose it greatly when you take the soufflé out of the oven.

8. If you store ceramic molds with dessert in the refrigerator, soak them for 10-15 minutes at room temperature before placing them in a hot oven.

9. As soon as the top of the dessert is lightly browned, the strawberry soufflé is ready.

Add a handful of fresh berries to the finished dessert and serve!

Bon appetit!
