Refreshing soup Gazpacho

Today we will cook a popular dish of Spanish cuisine - gazpacho. This is a chilled soup that is prepared for a hot summer day.

We will prepare gazpacho based on ingredients such as: tomatoes, bell peppers, cucumber.

This option is closer to the classic version, but in fact the ingredients in this dish may vary according to your taste preferences (watermelon gazpacho is also prepared).

No matter what kind of gazpacho you prefer, making it is as easy as shelling pears: the ingredients are mixed until smooth and then left to cool completely. The result is a very refreshing lunch, snack or even a drink to cool off on the hottest day.

Ингредиенты

Cucumbers - 2 pcs

Bulgarian red pepper - 1 pc.

Garlic - 2 cloves, coarsely chopped

Red wine vinegar - 2 tbsp.

Water - ½ tbsp.

Olive oil - 1/3 tbsp.

Basil, thinly sliced - 2 tbsp

Salt - to taste

Freshly ground black pepper - to taste

2 slices country bread/baguette, whole or diced and toasted in the oven.

1. Combine tomatoes, cucumbers, peppers, garlic, vinegar and water in the bowl of a food processor or blender. Mix until smooth, then add oil and mix again.

2. Season with salt, pepper and vinegar if needed. Cover and refrigerate until completely chilled and the flavors combine.

3. Meanwhile, in a large skillet over medium heat, add enough oil to coat the bottom of the skillet. Add bread and cook, stirring occasionally, until golden and crispy. Remove from heat, season with salt and let cool.

4. Before serving, ladle the soup into bowls and sprinkle with basil, croutons and a dash of butter.
