If you often bake all sorts of sweets for tea at home, then I have an interesting light curd dessert for you called Old Riga. Such a dessert will be a great substitute for any cakes with cream, because it has fewer calories, no flour at all, it is very easy and quick to prepare. The only thing that is required for this dessert is time, and then, not to cook it, but to freeze it, because it contains gelatin.

Canned pineapples - 1 can (380 g)

Curd - 400 g

Condensed milk - 120 g

Sour cream - 200 g

Instant gelatin - 20 g

Silicone mold 10x20 cm

2 muffin tins 10 cm in diameter

1. First of all, open a jar of canned pineapples and salt the juice from it into a bowl, add water to this juice so that the total mass of the liquid is 400 ml. Pour in instant gelatin, stir and let it swell. After 5 minutes, heat the gelatin to 60 degrees and leave to cool.

2. In the meantime, the gelatin is cooling down, rub the cottage cheese through a sieve so that there are no lumps in it.

3. Add sour cream to the curd and mix thoroughly.

4. Next, pour condensed milk into the curd mass.

5. Now it is better to beat the mass with a mixer so that the consistency is smooth and uniform

6. After a minute, pour in the gelatin and continue to beat until the gelatin is completely combined with the curd mass.

7. Now add pieces of canned pineapple, mix gently with a spoon.

8. It is best to use silicone molds for dessert, because it is convenient to get dessert out of them after hardening. My silicone mold is small and soft, so in order for it to hold its shape, after I poured the curd mass, I installed it in a larger, durable mold. I also got two small desserts in the form of cupcakes. Place the molds in the refrigerator to set, preferably overnight.

9. In the morning we take out the molds and put the Old Riga curd dessert on a dish.

10. A large dessert can be cut into portions and served with morning tea or coffee.
