Arborio rice - 250 g
Cream - 150 ml
Shrimps (peeled) - 250 g
Dry white wine - 100 ml
Olive oil - 1 tbsp
Onion - 1 pc.
Fish broth - 350 ml
Parmesan - 20 g

1. Onion cut into small cubes. Heat the oil in a frying pan and fry the onion in it until translucent, 3-4 minutes.
2. Put rice in a pan with onions.
3. Fry it until transparent, stirring, 2 minutes.
4. After that, pour dry white wine into the pan. Let the alcohol evaporate, 2-3 minutes.
5. Pour one ladle of fish broth into the pan. Cook the risotto until the broth has completely evaporated. Then add the broth again and continue cooking the risotto.
6. Taste the rice. When the rice becomes soft inside, but still retains its hardness, add the shrimp, which should first be cleaned of heads and shells, and the intestinal wreaths on the tail should also be removed. We cook the dish for 5-6 minutes.
7. At the very end of cooking risotto, add cream. We warm the dish for another 2-3 minutes.
8. Sprinkle the risotto with grated Parmesan cheese and remove the pan from the heat.
9. Serve the finished shrimp risotto in a creamy sauce in portions.
