The salad from the city of Liege, Belgium, gives us a certain idea of the cuisine of this country. On the one hand, the Liege salad with green beans turns out to be filling, on the other - quite healthy, so this salad has many fans.
Liege salad with green beans

Green beans - 200 g
Red onion - 1 pc.
Bacon - 50 g
Vinegar - 2 tbsp.
Water - 2 tbsp.

1. First of all, boil the potatoes in their skins in a saucepan with salted boiling water. Drain the water from the cooked potatoes, let them cool for about 10 minutes, then peel them and cut into half circles.
2. Cut the red or purple onion into rings and marinate in a mixture of vinegar and water for 10 minutes.
3. Cut the green beans into equal-sized pieces. If your beans are frozen, do not defrost them first.
4. Cook the green beans in boiling salted water for 7 minutes, then drain the water from the beans and immediately fill them with ice water or water with ice cubes added, leave the beans in the water for 2-3 minutes, this way they will retain their bright green color after boiling.
5. Place the boiled potatoes and green beans in a bowl.
6. Cut the bacon into small strips.
7. Fry the bacon, stirring, in a dry frying pan until crispy.
8. Add the fried bacon with the rendered fat to the bowl with the vegetables. Drain the marinade from the onion (but do not pour the marinade out right away). Add the onion to the salad, season the salad with olive oil. Taste the salad. If the salad is not sour enough, you can add a little of the marinade in which the onion was marinated. Also salt the salad, if necessary.
9. Chop the parsley and also add it to the salad. Mix all the salad ingredients.
