Fish hedgehogs are a great alternative to meat! A simple and filling hot dish for Lent, it differs minimally from the normal hedgehogs from minced meat familiar to most housewives, and the usual ones are easier to cook!
I will make fish hedgehogs from different fish, but most of them have a salmon color. Such hedgehogs also have a beautiful color. But this dish, of course, can also be made from white fish, they will just be paler in color. There should be twice as much meat as rice. And rice is poured for cooking with the same volume of water that it itself occupies. That is, how much rice was in the bowl or cup, that much water should be poured into the pan for it, it is very convenient to measure!
I recommend using soy sauce instead of salt for fish hedgehogs. This allows you to make them more tender. Onions serve the same purpose. But be careful with them. In my opinion, half an onion is the maximum, otherwise the onion flavor starts to show through the fish flavor too obviously. If you want, you can add a little garlic, parsley - whatever you like! My recipe for fish mince hedgehogs with rice is absolutely minimalist.

Fish - 400 g
Rice - 200 g
Water - 220 ml
Onion - 0.5 pcs.

1. Cook rice in an equal volume of water under a lid over low heat for 10 minutes from the moment it boils. After the cooking time has elapsed, immediately remove the pan from the heat.
2. While the rice is cooking, peel the onion and cut half into pieces that will easily fit into the mouth of a meat grinder.
3. Mince the fish and onion twice. Or puree them with a food processor or blender until completely homogeneous.
4. If you have time, let the half-cooked rice cool. If you don't have time, rinse it with cold water and discard it in a colander.
5. Mix the minced fish, rice and soy sauce and let them sit for about 15 minutes until the minced meat becomes less liquid and more sticky. If you have extra time, you can do it longer.
6. Roll the hedgehog balls with your hands slightly moistened in oil. My ball consists of a handful of minced meat, which I scoop up with my hand at a time.
7. Lightly fry the hedgehogs on all sides in vegetable oil in a preheated frying pan over high heat. Meanwhile, boil about 200 ml of water (I can't tell you the exact amount, it depends on the configuration of the frying pan).
8. Pour water into the fried hedgehogs so that the bottom is covered by at least 1 finger, and simmer the fish hedgehogs under a lid over low heat for a total of 10 minutes, turning them over once after about half the simmering time.
